The invention deals with the provision of a disposal process for substances with a high fat content which can be carried out at low cost and pollutes the environment to a smaller extent than is the case in known processes; for this purpose it is proposed to decompose substances with a high fat content anaerobically with admixture of an ammonia-containing buffer which stabilises the pH, as well as fat-cleaving and biogas-producing bacteria.
