PURPOSE:To produce the fermented soybeans by the use of a moisture-retaining and air-permeable film capable of maintaining a humidity and air-permeable state necessary for the fermentation of soybeans and not requiring its peeling when the fermented soybeans are eaten, and to enable to add a seasoning, a flavor material, etc., to the fermented soybeans. CONSTITUTION:Steamed soybeans (1) are mixed with the solution of Bacillus natto, charged in a synthetic resin container (2), covered with an edible film (4), closed with a lid having air-permeable holes (5), placed in a constant temperature and humidity tank, fermented, and subsequently matured to produce the fermented soybeans. The edible film is desirably produced from a cold water- insoluble material. If desired, various seasonings, flavor materials, etc., may be added to the edible film (4). |
