发明名称 NOVEL EMULSIFIER COMPOSITION AND METHOD FOR IMPROVING QUALITY OF STARCH FOOD
摘要 PURPOSE:To improve the quality of a starch food, by melting a glycerol (cis-un) saturated fatty acid monoester and a polyol fatty acid ester, granulating the melt under specific condition to obtain an emulsifying composition, and adding the composition to the starch food to be treated. CONSTITUTION:A molten mixture of (A) 60-95% glycerol saturated fatty acid monoester and (B) 40-5% glycerol cis-unsaturated fatty acid monoester and/or a polyol fatty acid ester which is liquid at normal temperature, is granulated by spraying in an atmosphere of <=5 deg.C under the condition to give the product of <=10 deg.C. The obtained emulsifying composition is added to a starch food or food mixture directly or in the form dispersed in water or in an oil or fat. The quality of the starch food can be improved by this process.
