PROBLEM TO BE SOLVED: To provide a method for producing a fish meat paste product such as CHIKUWA (a tubular roll of a broiled fish paste) by which rapid production can be carried out. SOLUTION: The joule heating is utilized only for increasing the temperature and the speedup can be provided as the whole production method in a method for producing a fish meat paste product such as CHIKUWA. The joule heating is utilized in heating up materials to be treated in the method for producing the fish meat paste product comprising respective steps for forming, gelling and heating from a ground fish meat prepared by adding common salt thereto, stirring and mixing the resultant mixture. The joule heat treatment is carried out before entering the gelling step and the temperature is increased to a gelling temperature zone. The joule heat treatment is preferably conducted in the forming step. The joule heating is carried out even just after the gelling step and the temperature is increased to a temperature zone required for the next step. The fish meat paste product is preferably the one formed into a cylindrical shape in all the cases. |
