Fermenting assembly for converting organic material by the action of microorganisms into a gas, especially methane, has a central pipe through which the organic matter is introduced. The assembly wall inner faces have a substrate (3) on which the colony of microorganisms breeds. The substrate (3) incorporates a number of upwardly-inclined gas collection passages (24) extending outwards. The bottom of the passages (24) is inclined downwards towards the reactor base (25).
