PROBLEM TO BE SOLVED: To obtain a processed gostrodiae tuber food with improved flavor of gostrodiae tuber, and to provide a method for producing the same. SOLUTION: This processed gostrodiae tuber food is obtained by several different methods. For example, the carbohydrate, e.g. starch, present in the gostrodiae tuber extract is saccharified by the aid of enzyme or microorganism into a sweetener. The saccharified liquid may be fermented into alcohol in the presence of mold into an alcoholic solution. The alcoholic solution may be further fermented in the presence of acetic bacteria into an acidifier with gostrodiae tuber components and improved gostrodiae tuber flavor. Thus, various characteristic processed gostrodiae tuber foods, e.g. sweetener, alcoholic solution and acidifier, are obtained at different stages of the enzyme- or microorganism- aided process. The processed gostrodiae tuber foods are expected to exhibit the effects inherent to natural gostrodiae tuber, and useful for various foods, e.g. health beverages and seasonings. |
