PROBLEM TO BE SOLVED: To make it possible to produce a high-quality emulsifier without deteriorating the function of the emulsifier and its commercial value and in a process to produce it with high making efficiency by vacuum-dehydrating an emulsifier solution containing water with the help of a thin coating film vaporizer. SOLUTION: The emulsifier is, for example, an organic ester monoglyceride such as glycerol fatty ester, polyglycerol fatty ester, citric monoglyceride, diacetyl tartaric monoglyceride or succinic monoglyceride, a fatty acid lactic ester such as sucrose fatty ester, sorbitan fatty ester, lecithin or stearoyl calcium lactate. The emulsifier is prepared as an emulsifier solution by previously dissolving or dispersing it in water and the emulsifier solution is dehydrated under a vacuum pressure using a thin coating film vaporizer. The water to be appropriately mixed with the emulsifier is normally in the ratio of 0.5-5 pts.wt. per 1 pt.wt. The appropriate pressure and temperature at the time of vacuum dehydration are normally 10-150 Torr and 120 deg.C or less, respectively. |
