PROBLEM TO BE SOLVED: To automatize the production of a carbonic acid-containing jelly cake, to simplify an operation and to mass-produce the cake by relatively inexpensive facilities. SOLUTION: This apparatus for producing a carbonic acid-containing jelly cake carries out a process for packing a jelly agent solution containing a gelatinizing agent to jelly containers 4 at a gelatinization temperature, a process for storing the jelly containers 4 in a pressure vessel 1 and closing them in the vessel, sterilizing the containers by heating, a process for cooling the interior of the containers approximately to the gelatinization temperature and reducing the pressure in the vessel, a process for supplying a carbon dioxide gas to the pressure vessel 1 to raise the pressure and further jetting an insoluble gas, a process for repeating application of pressure and decompression by a hollow elastic pressure bag 8, a process for dissolving the carbon dioxide gas in the pressure vessel 1 in the jelly agent solution in the jelly containers 4 and a process for cooling the pressure vessel 1 and gelatinizing the jelly agent solution. The pressure for applying the carbon dioxide to the pressure vessel 1 is about 0.4 MPa, the inert gas is any of a nitrogen gas, an arogn gas or a helium gas and the total pressure of the mixed gas of the carbon dioxide and the insoluble gap is about 1 MPa. |
