PROBLEM TO BE SOLVED: To obtain an emulsifying agent preparation for seasoning, uniformly mixable with a food in a short time, having no bad influence on appearance and texture, by including a water dispersion, etc., comprising a sucrose fatty acid ester having a HLB value equal to or higher than a fixed value, etc., and a saccharide compound. SOLUTION: This emulsifying agent preparation for seasoning contains an emulsifying agent preparation obtained by spray drying a water dispersion or an aqueous solution comprising a sucrose fatty acid ester and/or a glycerol fatty acid ester having >=5 HLB and a saccharide compound such as fructose, sucrose, etc. Preferably the formulating ratio of the emulsifying agent and the saccharide compound is 10/90-60/40 by weight and the seasoning composition is obtained by adding a seasoning such as soy sauce to the emulsifying agent preparation. |
