PROBLEM TO BE SOLVED: To provide a process for the preparation of Tofu (bean curd) containing pine needle while preventing the deterioration of the palatability of Tofu and enabling the taking of the nutrient component of Tofu together with the nutrient component and pharmacological component of pine needle at the same time. SOLUTION: Soybeans soaked with water are mixed with pine needles at a bean/pine mixing ratio of (15-20)/1. The mixture is pulverized, boiled and separated into soybean oil and bean curd refuse and the soybean oil is coagulated to obtain the objective Tofu. |
