摘要 PROBLEM TO BE SOLVED: To obtain a mixed flour having less after taste of a baking material, also having a good stability of a dough and capable of obtaining a bakery product having a good rise and appearance, and to provide a method for producing the bakery product. SOLUTION: This mixed flour for producing a bakery product contains sodium bicarbonate consisting of particles containing >=80% total number of particles having 10-80μm particle diameter. The bakery product is produced by blending 0.3-3 pt.wt. sodium bicarbonate consisting of particles containing >=80% total number of particles having 10-80μm particle diameter, based on 100 pts.wt. cereal flour.
