PROBLEM TO BE SOLVED: To provide a method for efficiently producing an extract or soup product or their related products each having excellent product properties apart from the conventional products in that it contains little potash and small amount of fat component, resists acidification and stays transparent while hardly colored. SOLUTION: This processed bone and meat products are produced by forming a coating film of a natural polymer and/or processed polymer e.g. alginic acid or its salts on the surface of an animal-derived fresh bone or meat, pref. frozen, applicable to foods or their raw materials. |
