PROBLEM TO BE SOLVED: To obtain a food capable of enhancing biophylaxis mechanism, or a food extract useful as a medicine effective for treatment of damage of a digestive system or the like by including a factor for inducing the expression of human antimicrobial peptide. SOLUTION: This food extract contains a factor for inducing the expression of a human antimicrobial peptide, preferably human β-defensin 2 or the like. The food extract is prepared by applying an operation such as an extraction with water or hot water, containing an inorganic acid, an organic acid, salts or the like, and an extract with alcohols to each kind of food materials such as an unrefined Shochu (Japanese white distilled liquor) and a concentrated liquid of Nukamiso (salted rice-bran paste for pickling). By this invention, the unrefined Shochu or the like, which is treated as an industrial waste and considered to be a cause of the environmental pollution, can be reused as a useful material. |
