PROBLEM TO BE SOLVED: To produce an artificial boiled rice excellent in shape-retainability at a rice-boiling time, taste, texture and a nutritive value by heating and kneading a food material consisting essentially of an albumen and a rice powder by an extruder, extruding the heated and kneaded product to provide a cylinder- shaped material, cutting the cylinder-shaped material and drying the cut material. SOLUTION: This artificial boiled rice is a food material consisting essentially of an albumen such as a condensed albumen and a dried albumen (preferably, in an amount of 25-50% expressed in terms of a dried material based on the dried material of the artificial rice) and a rice powder, and is produced by heating and kneading the food material by an extruder, and extruding the kneaded food material from a small hole of the extruder, cutting the extruded cylindrical material to provide granular materials, and steaming and drying the obtained granular material. |
