The device forms a module which comprises a belt 1 to which the pieces of bread 2 to be formed gain access, the pieces reaching the area where there are runners 9 which can be displaced in a rocking manner so that their leading edges come close together and move farther apart from one another and lift the side edges of the piece of bread 2, so that this elevation is regular throughout the entire process, producing a formed piece with the same length and shape and smaller width than the original. The movement of these runners 9 for lifting the side edges of the piece of bread 2 is in combination with the rotary movements of oblong folding plates 14 equipped with eccentric parts 16 which push rods 10 arranged longitudinally and linked to the runners 9 and mounted on supports 11 and 11' which can be displaced on transverse shafts 12 and 12'. By means of the runners 9 and the plates 14, the lateral edges of the piece of bread 2 can be raised and folded. <IMAGE>
