PROBLEM TO BE SOLVED: To obtain a taste-giving material having both the taste and smell of the brown-scorched portion of sponge cake, capable of expressing an excellent tasting force, and useful in industries for foods having the flavor and taste of the sponge cake, such as a confectionery industry or a baking industry, by heating a mixture liquid containing hen's egg, a saccharide and vegetable protein. SOLUTION: This taste-giving material is obtained by heating a mixture liquid preferably at a temperature of 70-110 deg.C. The mixture liquid comprising (A) hen's egg [for example, a hen's egg liquid comprising a yolk liquid having a yolk content rate of >=80 wt.% and a hen's egg enzymatic hydrolysate liquid comprising a hen's egg liquid hydrolyzed with a protease or a lipase (concretely, for example, an enzyme originated from the genus Rhizopus, Aspergillus or Bacillus)], (B) a vegetable protein (hydrolysate) and (C) a saccharide (for example, glucose, fructose, sucrose, xylose or lactose). |
