PRODUCTION OF ETHYL ALPHA-GLUCOSIDE

PROBLEM TO BE SOLVED: To produce an ethylα-glucoside which is one of minor components of Sake (a rice wine) or a sweet Sake at a high concentration by making anα-glucosidase act on an aqueous solution containing a starch or its hydrolyzate simultaneously with a yeast having the ethanol productivity or after adding the same enzyme thereto. SOLUTION: A yeast having the ethanol productivity and anα-glucosidase are simultaneously added to an aqueous solution containing a starch or its hycirolyzate or ethanol is produced by adding the yeast and theα-glucosidase is then added thereto. An ethylα-glucoside containingα-glucosyl group introduced into the ethanol is produced in a good yield even without adding the ethanol at all.
