PROBLEM TO BE SOLVED: To obtain a food improved in quality of sweetness and useful for cake, etc. while imparting the sweetness of general sweetener extensity and stretch of sweetness, by using a sweetener in combination with a taste-modifying material composed of tropomyosin (a partially decomposed peptide) and gelatin. SOLUTION: The objective food contains preferably 0.01-1 wt.% (solid basis) of a sweetener such as aspartame in combination with a taste modifying material produced by heating tropomyosin (a partially decomposed peptide) extracted from animal or fungus (the addition concentration is preferably 0.01-10% based on the solution) and gelatin (the addition concentration is preferably 0.01-10%) to an extract seasoning such as yeast extract. Preferably, the food contains a sweetener and a taste modifying material produced by heating a sugar and/or an amino acid in addition to tropomyosin (a partially decomposed peptide) and gelatin in water and in a natural extract. |
