PROBLEM TO BE SOLVED: To provide a method for producing an enzyme or an enzyme complex by adding a substance for reinforcing a germination process before or during a process for softening plant seeds in an aqueous environment, capable of giving so-called 'technical enzyme' useful in food industry and in chemical industry in a sufficiently high concentration. SOLUTION: In softening and germinating plant seeds in an aqueous environment, a substance (liposome, niosome, etc.) capable of relatively easily and rapidly permeating a biomembrane to reinforce a process for germinating the plant seeds is added to the aqueous environment before or during the softening process. Thus, the enzyme or the enzyme complex is obtained in a sufficiently high enzyme concentration or in a sufficiently high enzyme complex concentration. |
