The invention concerns an optionally alcoholic beverage containing anethol, characterised in that it comprises an efficient amount of a phospholipid acceptable in human food to improve the apparent solubility of anethol in said beverage, the phospholipid being selected from the group consisting of lecithin's or lysolethicin's. A typical beverage comprises for one litre: 8 to 40 g of ethanol; 0.2 to 10 g of anethol: 0.4 to 30 g of phospholipids; sufficient amount of water for 1l, at 20 DEG C a sufficient amount of substances destabilising the emulsion particularly phenolic compounds when said beverage is diluted with water containing divalent food cations in sufficient amount, antioxidant substances, optionally sugar. |
