A truss (10) is applied above the hocks (12) of a chicken (14) as a single o r double loop with a knot (16). The hocks (12) are crossed and the legs (20) a re held against the breast of the chicken (14) with the hocks (12) in proximal but spaced relation to the tail (18) of the chicken (14). The truss is made of an edible material such as slit tubular collagen (sausage) casing.
