PROBLEM TO BE SOLVED: To obtain the subject maltitol crystals that is convenient for production of chocolate, chewing gum and the like without defects in fluidity, solidification, dissolution and compression by crystallizing maltitol syrup. SOLUTION: The crystals of maltitol is modified in their crystal form by constructing the regular octaheclron of 50-500 μm long sides, namely in a double pyramid structure including two regular tetrahedrons arranged side-by-side by an about 50-500 μm wide tetragonal cross section. In the crystalline maltitol, composition, the maltitol syrup having the maltitol content of >=87%, preferably >=92%, more preferably >=96% and containing <=1% of maltotritol on the dry basis is crystallized. |
