PROBLEM TO BE SOLVED: To obtain a food having anticariogenic activities, activities for propagating Bacillus bifidus, activities for promoting aborption of calcium, and physiological activities such as immunostimulation and cancer inhibition by including a galactosyltrehalose. SOLUTION: This food contains a galactosyltrehalose such as O-β-D- galactopyranosyl-(1,6)-O-α-D-glucopyranosyl-(1,1)-α-D-glucose, obtained by adding β-galactosidase to a lactose or a raw material containing the lactose, and a trehalose or a raw material containing the trehalose. The food is preferably an agricultural food, a fermented food, a livestock food, a fishery food or a chewing gum. |
