摘要 PROBLEM TO BE SOLVED: To efficiently produce a high quality soybean sauce by growing a malt having a high enzyme activity by producing the malt while allowing a magnetic field to act thereon. SOLUTION: This method for producing a soybean sauce comprising a raw material-treating step, a malt-forming step and a fermenting step comprises carrying out the malt-formation while allowing a magnetic field such as a variable magnetic field to act on the malt and carrying out ventilation to provide the soybean sauce. Preferably, the magnetic field is varied at 0.1-60 sec/ cycle and has 1-500 mT magnetic flux density. Preferably, the magnetic field is allowed to act on a solid medium with added spawns with ventilation to cultivate microorganisms, and the obtained microorganisms are used as the malt for the soybean sauce brewing.
