摘要 This invention is related to food industry and is intended for manufacturing of food products, which imitate natural salmon red roes. The aim of the invention is to improve the organoleptic and nutrient qualities of artificial roes, using natural, low caloric, easily digested food products, and to simplify the production method and reduce product price. For this purpose, the albumen red roes are made of fish broth, gelatine, oil, salt, preservatives and food colour. The new is that a citric acid here is put as an additive maintaining the following ratio (in mass percentage):fish broth 45-50gelatine 12-17oil 10-12edible salt 3.5-5.0citric acid 0.12-0.17sodium benzoate 0.4 -1.0potassium sorbate 0.4 -1.0food colour 0.3 - 0.5water up to 100.The fish broth is boiled and mixed with gelatine solution adding oil, salt, food colour starting to compose roes. The novelty of the production method features the addition of citric acid and roe formation by dripping a cooled off mixture from a dropper into a dish with cooled vegetable fat (0 / -10 degrees Celsius), that rotates with regard to the dropper, mixing it periodically. In addition, the roes may be composed by dripping a cooled off mixture from the dropper, that is rotated with regard to a dish with oil, into the dish to which the chilled oil is pumped through an opening in the bottom in order to keep oil circulating.
