Water-in-oil food emulsion contains live probiotic bacteria in the aqueous phase. Independent claims are also included for the following: (1) production of the emulsion by preparing an oil phase comprising edible oils and oil-soluble additives, especially emulsifiers, by mixing at 45-60 deg C, preparing an aqueous phase containing live probiotic bacteria by mixing at a temperature below 40 deg C, emulsifying the oil phase and aqueous phase at a temperature below 40 deg C, crystallizing the emulsion, and aseptically packaging the product; (2) production of the emulsion by preparing an oil phase comprising edible oils and oil-soluble additives, especially emulsifiers, by mixing at 45-60 deg C, preparing an aqueous phase containing at least one preservative by mixing at 45-60 deg C, emulsifying the oil phase and aqueous phase at 45-60 deg C, pasteurizing the emulsion at about 85 deg C for 15-25 seconds, cooling the emulsion to 30-40 deg C, adding an aqueous phase containing live probiotic bacteria, crystallizing the emulsion, and aseptically packaging the product.
