Process for producing a liquid concentrated plant extract from plants containing mannitol and thus obtained extract and mannitol

Prodn. of concd. liq. plant extracts with a low mannitol content from mannitol-contg. plants (vegetables or mushrooms) comprises concentrating a liq. extract to 50-65 degrees Brix at a temp. below 80 degrees C, opt. under vacuum; cooling the concentrate to crystallise mannitol; and removing the crystals from the liq. phase.
