PROBLEM TO BE SOLVED: To obtain the subject complex having a low viscosity when dispersed in water, excellent in suspension stability, texture, shape retaining properties and fluidity, etc., of a tube fed liquid diet and having both effects of water insolubility and water solubility of dietary fibers by including a specific microcellulose and a polydextrose, xanthan gum and/or gellan gum therein. SOLUTION: This complex contains (A) 20-99 wt.% of a microcellulose having <=30 μm average particle diameter when dispersing the complex in water, (B) 1-80 wt.% of a polydextrose and (C) >=0.1 and <3 wt.% of xanthan gum and/or gellan gum. The viscosity of the objective complex when dispersed in water at 3 wt.% concentration thereof is <=300 mPa.s and the content of a colloidal fraction of the complex is preferably 10-40%. The complex is preferably obtained by mixing the ingredients A to C in a hydrous state, e.g. a slurry or a pasty state and then drying the resultant mixture. |
