PROBLEM TO BE SOLVED: To provide a method for boiling beans, not deteriorating work environments, capable of preventing the loss of heat, capable of reducing the cost of energy, not requiring the experience and skill of workers, capable of killing viable bacteria stuck to the beans, especially heat-resistant spore-beating bacteria strongly adhered to the beans with a polysaccharide viscous liquid, and not deteriorating the quality of the beans, and to provide a device therefor. SOLUTION: This method for boiling beans comprises charging the beans into a chamber 1 and subsequently applying saturated steam having a high pressure of 5-7 Kg/cm<2> and a high temperature of 158-169 deg.C to the beans for 15-30 sec to boil the beans. The device for boiling beans comprises the chamber 1 resisting to a high pressure of 5-7 Kg/cm<2> (gauge pressure, same hereinafter) and a high temperature of 158-169 deg.C and receiving the beans, and a nozzle 2 for blowing out the high pressure steam having the high temperature of 158-169 deg.C into the chamber 1. |
