FIELD: physical methods of analysis of gluten. SUBSTANCE: process consists in measurement of spectral characteristics of specimens of wheat and in subsequent determination of content of gluten by their values with allowance for graduation measurements. Device for implementation of process includes radiation source, dish, photodetector and measurement unit. In the course of realization of process measurement of integral intensities of diffuse transmission is conducted in two spectral intervals of 400-600 nm and 600-850 nm and content of gluten is found by formula <EMI ID=0.511 HE=12 WI=21 TI=CHI> where C is content of gluten; A is graduation coefficient, J<SB>k</SB> is intensity of integral transmission in 600-850 nm interval; J<SB>o</SB> is intensity of integral transmission in 400-600 nm interval. Insertion of diffuser, two filters and photodetector makes it feasible to shorten measurement time and to increase authenticity of obtained data.
