<p>A steam oven for baking bread, rolls and pastry has a closed-circuit system of pipes through which steam circulates to the multilevel oven chamber. The supply of steam is regulated by a burner-blower (4). The hot gases first pass from the vapor generator (8) to a passage (9) into which the steam pipe closed ends (3) project. The pipe-ends (3) have flaps or baffles which may be raised or lowered to protect the pipe-ends (3) from the hot gases.</p> |
