<p>PROBLEM TO BE SOLVED: To provide a method for readily obtaining a refined rice wine and other liquors having an content of thiamine extremely higher than that of a conventional method. SOLUTION: A refined rice wine yeast having specifically reduced thiamine transporting ability than a conventional yeast, having slight intake of thiamine is selected by separating a pyrithiamin-resistant strain from an ordinary refined rice wine yeast. The selected rice wine yeast is used for preparing a rice wine by an ordinary brewing method to produce a refined rice wine. Another yeast such as wine yeast, beer yeast, etc., can be used besides a refined rice wine yeast.</p> |
