PROBLEM TO BE SOLVED: To prepare a vessel-contained two layered pudding in which a caramel sauce is in the upper layer and a pudding base is in the lower layer, and which is not needed to transfer to another container, but only to turn the vessel upside down when this is served to eat. SOLUTION: This two layered pudding comprises the upper layer consisting of a caramel sauce containing sugar and 1.0-1.5 wt.% of a stabilizer and having a sugar content of 18-25, and the lower layer consisting of a pudding base mainly containing a milk component, sugar and a stabilizer. This is prepared as follows: at first, a pudding base mix comprising the milk component, sugar and stabilizer as main components is placed in a vessel; secondly, the surface is cooled to gel the surface layer; a caramel sauce comprising sugar and stabilizer is placed on the gelled surface; and subsequently the pudding base mix is cooled to gel it. |
