PROBLEM TO BE SOLVED: To process rice into rice having a low phosphorus content, a low protein content and a low potassium content. SOLUTION: This method for producing rice having a low phosphorus comprises polishing rice until to give a phosphorus weight concentration of <=500 mg/kg of rice (water content: 14.5 wt.%) so that the rate of phosphorus originating from the rice of staple food is <=25% among a total phosphorus amount to be taken by a renal disease patient a day.
