PROBLEM TO BE SOLVED: To obtain chitin by treating cuttlefish gladii as a fishery waste and provide a treatment method for utilizing fishery waste. SOLUTION: Dilute hydrochloric acid or dilute sodium hydroxide aqueous solution of 0.3-3 normality is added to cuttlefish gladii to extract protein, insoluble chitin is separated from the extract. When hydrochloric acid is used for extraction, the extract is concentrated, while hydrochloric acid is added to the extract, when a dilute sodium hydroxide aqueous solution is used, so that the concentration of the hydrochloric acid is adjusted to about 6 normality. Then, the treated extract is heated to hydrolyze the protein. A seasoning or flavoring agent is obtained by neutralizing the hydrolyzate. Further, the separated chitin-washing solution can be used for preparation of an extractant for the following extraction of protein. |
