PROBLEM TO BE SOLVED: To provide a milling method for makign SOBA (buckwheat noodles) which is formed from 100% SOBA powder without using a binder such as flour and is resistant to breakage. SOLUTION: (1) A milling machine is incorporated into a milling process and brown SOBA is milled coarsely to facilitate the removal of flower powder which is starch of the albumen portion of SOBA. (2) By making a shifter triple structure, the coarsely milled powder is sieved into the flower powder, seed skin, and the outside layer of SOBA powder. (3) The outside layer of SOBA is powdered carefully not to be oxidized by using a stone mortar. |
