<p>In the production of orange juice by reconstituting concentrated orange juice with addition of the aqueous phase and ethereal oils, the amounts and ratios are regulated so that the aroma dilution factor (FD) compared with freshly squeezed orange juice is higher for one group (A) of aroma-active components and the same or lower for another group (B). In the production of orange juice by reconstitution of concentrated orange juice with addition of the aqueous phase and ethereal oils, the amounts of aqueous phase and ethereal oils, the ratio of concentrated to unconcentrated aqueous phase and the ratio of concentrated to unconcentrated ethereal oils are regulated so that the aroma dilution factor (FD) compared with freshly squeezed orange juice is higher for one group (A) of aroma-active components and the same or lower for another group (B). Group (A) consists of ethyl isobutanoate, alpha -pinene, ethyl butanoate, ethyl 2-methylbutanoate, hexanal, myrcene, octanal, 2-isopropyl-3-methoxypyrazine, 2- and 3-methylbutyric acid isomers and vanillin. Group (B) consists of nonanal, methional, E,E-2,4-decadienal, beta -ionone, tartarolactone, ethyl propionate, 1-penten-3-one, 2-/3-methylbutanol, ethyl 3-hydroxyhexanoate, 4,5-epoxy-E-2-decenal and furaneol. An independent claim is also included for the orange juice produced in this way.</p> |
