PROBLEM TO BE SOLVED: To obtain a noodle product containing heated powder of a starchy plant, soft water, a heated starch, an ionic gelatinizing agent, an emulsifier, a cation, an acid and an oil, having a specific content of a dried material, and a pH, and further having a ribbon shape and a smooth, soft and slightly elastic texture. SOLUTION: The objective noodle product has 30-45 wt.% content of a dried material and a pH of 3.7-4.5, contains heated powder of a starchy plant or a semolina, soft water, a heated starch, an ionic gelatinizing agent, an emulsifier, a cation forming a gel with the ionic gelatinizing agent, an acid and an oil, preferably has a rectangular cross section having 8-14 mm width and 0.6-1.2 mm height, and has sufficient water content. |
