PROBLEM TO BE SOLVED: To obtain the subject compound usable for synthesizing of allicin, etc., as a crosslinking agent of a protein by converting a specific aldehyde to an aldehyde protected with acetal, then to aminonitrile and further to amino acid amide. SOLUTION: This (S)-2-amino-ω-oxoalkane derivative is expressed by formula I (n) is an integer of 1-4; R1 and R2 are each independently a 1-10C alkyl, etc.}, and is obtained by crosslinking an aldehyde of formula II by bringing it into contact with an alcohol or a diol under an acidic condition, converting it to an acetal-protected aldehyde of formula III, converting the resultant aldehyde to aminonitrile of formula IV, converting the resultant aminonitrile to amino acid amide of formula V in the presence of a base, ketone or an aldehyde at pH 11-14, recovering (R) amino acid by directly hydrolyzing an (R) enantiomer of the resultant amino acid amide and isolating (S)-amino acid by subjecting (S) enantiomer to enantiomer selective hydrolysis with an enzyme to be converted to (S)-amino acid. |
