PROBLEM TO BE SOLVED: To obtain an extract of miso (fermented soybean paste) facilitating the use of miso, and facilitating the quality control in fields of preservation temperature and consumption period by condensing an extraction liquid containing extracted components capable of becoming a state of dissolution or the like in the components of the miso. SOLUTION: The objective extract of miso is obtained by mixing the miso with water to provide a mixed liquid, removing components insoluble or nondispersive in water from the obtained mixture, and concentrating the remaining extraction liquid. The concentrated liquid is preferably subjected to a heat treatment at a temp. of 63-100 deg.C for 30 min to 2 hr. |
