This invention is intended for producing dairy products and may be used in the milk processing industry for producing ice cream. The aim of the invention is to produce a new milk product: an ice-cream distinguished by balanced, high nutrient characteristics and good taste values. The novelty of the invention consists in the dairy product - the ice cream - recipe composition, which differs from traditional ones in some typical features. A caramel mass, caramel aroma and caramel paint are used for the ice cream, enabling to produce a product with a mild and pleasant taste. The caramel mass is inserted in a portion core solid from top to bottom, but not mixed in the overall ice-cream mass. |
