Preparation of animal protein free meat substitute suitable for vegetarians comprises adding a salt solution to an aqueous emulsion of non-animal protein and plant-derived thickener to form a fibrous meat substitute product which contains a calcium and/or magnesium salt. Preparation of an artificial meat product containing no animal proteins comprises the following steps: (a) preparation of a mixture of a non-animal protein, a plant-derived thickener and water; (b) intensive stirring of the mixture at 40-90degreesC to form an emulsion; (c) mixing 1000 kg of the emulsion with 50-90 kg of a salt solution containing 0.01-20 wt.% calcium and/or magnesium salt, to form a fibrous product; (d) rinsing the fibrous product with water; and (e) removal of water from the fibrous product to give a moisture content of 1-50 wt.%. An Independent claim is also included for the artificial meat product made by this method.
