PROBLEM TO BE SOLVED: To provide a method for simply and efficiently producing well boiled beans capable of giving the original taste of the beans, having a soft palatability not causing the splitting of the beans into their pieces and having good preservability. SOLUTION: This method for producing well boiled beans comprises applying a water-absorbing treatment to beans so that the weight of the treated beans increases 1.5-1.8 times, charging the treated beans and a sugar solution having a Brix of 50-70 into a container, sealing the container, and subsequently applying a pressured heating treatment to the sealed container. The water-absorbing treatment preferably comprises a hot water immersion treatment at a temp. of 90-100 deg.C for 15-20 min. The beans are preferably Phaseolus angularis. |
