PROBLEM TO BE SOLVED: To provide both a method for pressing an unrefined soy sauce so as to prevent the soy sauce from deteriorating due to oxidation in a pressing step and an apparatus therefor. SOLUTION: This apparatus for pressing an unrefined soy sauce is equipped with a covering means 7 having high airtightness such as a sheet or a film so as to surround the whole surface of a filter cloth 1 and is designed so as to provide the surface of the filter cloth 1 with an atmosphere of an anaerobic gas such as nitrogen gas, gaseous carbon dioxide, helium gas, neon gas and argon gas. |
