PROBLEM TO BE SOLVED: To obtain a dough mass for pizza, being simply prepared, having excellent reproducibility of the finished mass, the simple control of dough, excellent durability and yet deliciously edible as it is, a pizza dough obtained by extending the dough mass and a pizza preparing texture such as a crispy resistance to the teeth, feeling on the tongue, etc. SOLUTION: This dough mass 10 for pizza characteristically contains no yeast plant and has a structure provided with discontinuous solid butter layers 4 in a continuous wheat flour layer 2. A pizza dough is obtained by extending the dough mass 10. A pizza is obtained by a process for baking the pizza dough and has a structure in which a butter constituting the solid butter layers 4 is dissolved and permeated into the wheat flour layer 2 and discontinuous air layers are formed in the wheat flour layer 2. |
