<p>Process and apparatus for preparing a beverage, especially espresso coffee, from a predetermined metered amount (5) of coffee powder through which a predetermined amount of heated water is passed, the water being conveyed from a reservoir (1) fed by a forcing pump (15) at a predetermined maximum pressure, comprising a preliminary stage during which the metered amount of coffee powder (5) is wetted by an initial quantity of heated water at a pressure below the predetermined maximum pressure generated by the pump (15) for a given period of time, followed by a beverage preparation stage during which the heated water is passed through the metered amount of coffee powder (5) at the predetermined maximum pressure generated by the pump (15) and maintained at this pressure until preparation of the beverage is complete and the latter has been dispensed. The said preliminary stage in which the metered amount (5) of coffee powder is wetted is effected by intercepting, for a given and adjustable period of time, the cold water supply fed by the pump (15) to the said reservoir (1) and allowing the heated water to flow from the said reservoir (1) to the metered amount of coffee (5) under the same pressure and temperature conditions as those prevailing inside the reservoir (1). <IMAGE></p> |
