PROBLEM TO BE SOLVED: To provide a method for producing a concentrated soup stock by which the concentrated soup stock excellent in flavor is obtained by using hot water in an amount as small as possible at a short time by extracting dried fish with a part of a prescribed amount of the hot water at the first step, and adding the rest of the hot water thereto at the second step or later to carry out the extraction. SOLUTION: This method for producing soup stock by bringing dried fish such as dried bonito with a prescribed amount of hot water comprises at least two steps for extracting soup stock, of the first step for extracting the dried fish by using a part of a prescribed amount of the hot water in the weight of O.5-3.0 times as much as the weight of the dried fish, and the second step for carrying out the extraction by adding the rest of the hot water. The objective concentrated soup stock excellent in flavor is obtained by extracting inosinic acid of a typical flavor component with the hot water in an amount as small as possible at a short time. |
