PROBLEM TO BE SOLVED: To obtain a bread processed food capable of inexpensively producing in large amount, excellent in appearance, texture and taste by absorbing slurry containing a yolk ingredient heated to a prescribed temperature into bread and then heating the bread. SOLUTION: Slurry containing preferably 2-15 wt.% (expressed in terms of solid content) yolk ingredient heated to 40-70 deg.C is absorbed in a ratio of 2/5 to 4/5 based on the thickness of bread into bread and the bread is then heated to provide the objective bread processed food having 5-35 mm thickness. Furthermore, the bread processed food is preferably packaged so that cross section comprising a bread layer in which slurry is absorbed and a bread layer in which slurry is not absorbed can be observed. |
