The invention relates to a method for controlling the fermentation process in the production of beverages. According to the invention, optically recorded signals are generated from the inside of the fermentation tank continuously or from the top area at intervals. During the fermentation process, said signals represent the surface of the fermentative substance or the bottom or part of the sidewalls of the fermentation tank when the fermentation tank is empty. The signals are used for controlling the fermentation process. The invention also relates to a fermentation tank with an optical recording device to implement the inventive method and to a method and a device for controlling the fermentation process in a plurality of fermentation tanks.
