Preparation of a baked chocolate flan involves: (i) preparing a base from milk, cream, sugar and chocolate; (ii) heat treating to sterilise the mixture; (iii) cooling; (iv) adding eggs; (v) preheating; (vi) filling the mixture in a container; and (vii) baking in an oven. The novelty is that the chocolate to be used has been subjected to alkalinisation treatment so that the mixture to be mixed has pH above 6.8. Also claimed is a chocolate flan, free of thickening or gelling additives obtained by the process. |
